Hi friends! My name is Katie and I’m a Registered Dietitian (RD) who is obsessed with all things related to REAL food, self-sufficiency and independence. My husband, Ryan & I bought our first home in 2007 on a tiny city lot in Kansas City. After a few years… our yard had been converted into a garden. We knew we needed more.
Fast forward to 2013 when we purchased our DREAM 5 acre property in eastern Minnesota! We bought the property while it was buried under several feet of snow, so it was a fun surprise to see the acreage come to life once everything finally melted!
Over the years, we have expanded the gardens, built a poultry palace (yes, that’s what we call it!), identified wild medicinal plants, created a pastured poultry operation and much more. I have been steadily increasing my food preservation efforts with a goal of self-sufficiency. There’s nothing more comforting than seeing a shelf-full of REAL food that you grew yourself, especially in the unstable world we live in today.
I became a Registered Dietitian in 2010 and completed my master’s degree in 2014. For 11 years I worked in large metro hospitals primarily focused on trauma, GI surgery and even placing feeding tubes. However, in 2020, I finally came to terms that this wasn’t the right fit for me. I had a few things to offer in terms of nutrition interventions, but at the end of the day, it wasn’t much. I wasn’t really healing people. I needed a change.
After solving my own long-standing gut issues with the help of an Integrative and Functional Dietitian, I knew this was the direction I needed to go. I wanted to help people get better by identifying the root cause of their issues, rather than just focusing on symptom management. I completed further schooling through the Integrative & Functional Nutrition Academy and am now practicing through two functional nutrition virtual clinics and am loving every minute of it!
